Honey Garlic Slow Cooker Chicken

Honey Garlic Slow Cooker Chicken has that sweet savoury flavour combination, the honey provides the sweet element while the garlic adds the savoury notes creating the perfect balance of flavours. The chicken is tender and juicy, the marinade being the perfect mix to tenderize the chicken, resulting in a juicy and succulent meat. So versatile and easy to make, can be served with a wide variety of sides such as rice, roasted vegetables or even a salad, is also great for meal prep and can ae eaten for lunch or dinner. A definite crown pleaser, loved by all, a great dish to serve if you are hosting a dinner party or a pot lock meal. 
Serves 6

Ingredients:

  1.  One kg boneless, skinless chicken thighs 
  2. 4 Cloves Garlic 
  3. 2 tsp Fresh ginger 
  4. 8 tbsp Dark soy sauce See Note 3.
  5. 2 tbsp Oyster sauce Optional. See Note 4.
  6. 4 tbsp Honey Runny or set is fine.
  7. 4 tbsp Tomato ketchup
  8. 1/2 tsp Chilli flakes Optional
  9. At the end 1 tablespoon cornflour

Method:

  1. Put everything APART FROM the cornflour, into the slow cooker (crock pot). Give it a good stir.
  2. Put the lid on and cook on HIGH for 4 hour or LOW for at least 6 hours.
  3. When the chicken is tender and falling apart, scoop out a couple of tablespoons of the liquid and mix into the cornflour in a small bowl or mug. Whisk until totally smooth and add back into the chicken mixture.
  4. Gently shred the chicken with two forks and stir thoroughly so that the cornflour is distributed.
  5. You may find that the sauce thickens almost instantly (depending on how long it takes you to shred the chicken), if it doesn't, just leave in the slow cooker switched onto HIGH for about 10 minutes stirring occasionally.
  6. Serve sprinkled with chopped spring onions and sesame seeds.
